More than twenty herbs and cinchona bark are left to infuse in alcohol, all herbs are divided into three groups according to the aroma to be extracted. After maceration, about three months, the infusions are mixed and sent for maturation for 6 months in oak barrels until the correct balance is obtained. The extracts are then added to the wine along with alcohol and sugar. The wine is then clarified and stored in a cool place at a controlled temperature for about 10/12 days, after which the wine is filtered and bottled.

Barolo Quinato is a red fortified flavored wine with quinine from the Italian region of Piedmont in the north of the country. It owes its reputation and recognition to the fact that it is made on the basis of the famous Barolo wine, moreover, aged.
Despite the fact that only Barolo DOCG can serve as a basis for Barolo Chinato, the latter does not inherit the status of the former, i.e. itself cannot be labeled as the DOCG of the same name.
