There is no oak aging, the wine is kept in concrete vats for 3 months before the final bottling.
The area of the vineyard is 80 hectares. Vineyards in the form of free-standing bushes.
The composition of the soil is rocky. Old vines with a yield of only 3.5-4 t/ha. Harvesting is by hand.

The wine is an expression of the young point of view of Maria Hover, its creator. It strives for freshness, elegance and minerality in an area traditionally produced for heavy and oaky red wines.
Maria Hover and the Parajes del Valle team in their wines demonstrate the subtlest expression of the powerful Monastrell, without losing the charisma and breed in the wine itself. Key practices are early harvest, limited yields, fermentation with wild yeast at controlled and low temperature, and the use of cement tanks or old large format barrels.
