White sparkling dry wine Domaine Bourillon Dorleans, Vouvray Brut ”Premium” AOP created from Chenin Blanc grapes. Manual harvesting is used. The vineyards are located on a very beautiful plateau at the junction of the Loire and Cher valleys. The age of the vines ranges from 10 to 50 years. The grapes are pressed in a pneumatic press, the must undergoes alcoholic fermentation with natural yeast in 600-liter barrels, which can take up to six months. Malolactic fermentation is not allowed. According to the traditional method for sparkling wines used in Champagne, secondary fermentation and aging on the lees are carried out in the bottle. Sparkling wine matures on the lees for at least 12 months. Wine potential is 4-5 years
