The wine is vegan and organic.
Vinification: removal of the stalk and crushing of grapes, maceration for 10-15 days in special tanks at a temperature of 25-28 ° C, frequent pumping. After this period, the wine is removed from the tanks and fermented exclusively with wild yeast at a controlled temperature in stainless steel tanks. After maloloktiki, the wine matures for several months on a noble lees in barrels at a controlled temperature.
Structure and complexity allow the wine to mature during bottle aging, which can last up to 15 years, reaching the pinnacle after
10 years from harvest.
Natural: organic and vegan principles, no added sulfites.
Soil: alluvial, very rich in clay.
Climate: mild, with very little and high summer temperatures allowing the grapes to ripen perfectly.
