Winemaking.
The wine is fermented in steel tanks at a cold temperature/long maceration/two pressings per day during fermentation and one at a low temperature until the end of the maceration. It takes about 31 days.
Aging for 18 months in new French barrels 90% and American barrels 10%
Alcohol level 15%
Rompesedas is one of the iconic vineyards for the company. The name was used by the founder of the winery in the initial stages. Planted in 1917, this is a surprisingly old plot. Hand-picked harvest in boxes, hand-picked berries and the best technology for wine production; Rompesedas conveys Thoreau's character, individuality and traditions.
The climate is a cold and windy winter with a dry and hot summer, which created very good climatic conditions for an exceptional harvest.
The year of planting grapes is 1917 (the vines are 105 years old)
The area of the vineyard is 11.25 hectares.
