The vineyard is located in the east at an altitude of 500 meters. above sea level, where the soil is volcanic limestone. The grapes are harvested from early autumn to mid-October. Cold maceration for 6-7 days at 8 ° C precedes alcoholic fermentation, which takes place for three weeks at a controlled temperature and with repeated punching down. After transfusion, part of the wine is aged in stainless steel vats and partly in a ton of oak (400-liter barrels) for about 12 months.
